Since starting Paleo, I have REALLY had to think about dinners without grains. It was easy to make meatballs or meatloaf "clean," by simply using oats to hold it together. No oats with Paleo, so I had to find a new recipe. Here is one I have doubled and made over and over again! SO simple, so delicious, and you can eat them plain as a snack, add to zoodles and sauce, or add them to your favorite soup, like my veggie minestrone!
